Zhajiang mian with veggie toppings?

I was watching Simply Ming the other day and he was cooking Zhajiang mian (black bean sauce noodles) with his dad...Being Korean, I'm familiar with ja jiang myun topped w/ sliced cucumbers. However, Ming made his w/ a ton of blanched veggies on top, i.e., carrots, bean sprouts, cucumbers, etc. It almost looked like bibimbap when he was done with it (sans the rice, of course). Is anyone else familiar with this preparation and if so care to share a recipe?
