New Yorker Visiting Northwest--Please Help!

I grew up in Utah, and have slowly grown weary of the NYC pace. I will be visiting the Northwest in a week for an exploratory trip to possibly move. I will be staying in Portland most of the time as a home base, but also travelling to Seattle, Vancouver, and the coast.

I would love to get some suggestions from you. These are my general desires: I prefer to eat at small neighborhood oriented restaurants and generally stay away from the heavy hitters. I really would like to eat off the beaten path where more locals go than areas saturated with tourists. I'm particularly curious about Capital Hill and Chinatown in Seattle, and SE/NE Portland. Vancouver, I really have know idea where to begin.

Oh, and of course, where to go for coffee in the morning.
