new york sour question

I was reading about the NY Sour a while back, still haven't managed to have one yet. One thing I was just wondering though, with the wine floated on top. Once served, are you supposed to leave it as is or stir it together? IOW is the float purely for presentation purposes or is it meant to be consumed deconstructed like that? I could see it going either way.
