What's wrong with this place? Has it gone downhill?

Admittedly, it's been several years (maybe only 2) since I last visited, but my most recent one was admittedly very poor.

Shortrib Red Chile soup was oily and bland, and the meat was chewy. Chips and guac were pretty good, but the chips tasted stale, even after asking for a new batch. My cubana torta was sadly too salty, and there wasn't enough filling for the bread, which was very good, by the way. Maybe the best part of the meal.

I take that back, the best part of the meal was the churros, ice cream, and the champurrado.

Was this just an off-night? Or has there been a more noticeable decline in quality?

I remember going to Xoco several years ago and everything seemed to pop with flavor. Back then my seafood caldo was revelatory, both briny and earthy. The tortas, esp. the suckling pig one, was juicy and tender. In contrast to this last visit, it was like night and day.

Xoco now feels less like avant-garde Mexican street food, and more like overpriced Taco Bell.
