What went wrong with my chicken kabobs?

The recipe said to marinate in chopped garlic, spices and yogurt for 20 minutes. I left in fridge about 1/2 hr and on counter another 1/2 hr. (Many other recipes have you marinate for hours so I don't think that's the problem.)

Recipe says to cook a total of 10 minutes. I used a newish indoor electric grill. I decided to cook them until my thermapen registered 165. So, I cooked much longer than ten minutes and when testing it ranged from 144 - 155 when I finally took them off. Dry. (Of course, since I prefer breast meat!) Is there something wrong with my thermapen? Should I test it? How?
