Worried I’ve undercooked ribs?

esspee123 | Apr 29, 202001:01 PM     4

Before you tell me ribs are best cooked slowly, I know, I just didn’t have time! I’m not concerned about taste/texture quality in this instance, but rather safety. They didn’t taste incredible for that reason, but that’s not really what I care about right now! It was my first time making ribs from scratch :)

I just cooked a full rack of ribs in the oven. On the packet it said to cook them for 35 minutes, but I had them in the oven with diced sweet potatoes, so I put them in for another 15/20 minutes. When I cut open the meat it was brown inside but the ribs were really tough and chewy, and I read online that that means they’re undercooked.... do you think I’ll get sick or do you think they were cooked, just safely cooked with bad instructions?
