World Travel with Knife Roll?

Hello Everyone!
My wife and i have been saving up for a world travel trip starting in Europe, crossing through the middle east, and into southeast Asia. Our plan is to begin a travel video blog to help others learn to travel cheaply. It will feature a new restaurant, street food vendor, or just a hole in the wall spot every two weeks where ideally ill get some footage with the chef or cook. Not a lot of people are doing this for travel blogging, and i think we have a pretty good idea. My concern is getting through different countries with my knife roll so i have the tools i need. It's pretty obvious that on an Airline ill need to check the bag, usually into a bigger suitcase to prevent theft. When travelling through customs I'm concerned ill get some problems. Although, How is it possible that chefs aren't traveling around with their kit right?

Any advice I can receive would be great as I'm trying to be as prepared as possible. Have any of you done this type of travel before? If so please help.
