Not Japanese ramen or udon but Chinese soup noodles preferably made with thin egg noodles and won ton (pork and/or shrimp dumplings). Toppings may include char siu (sliced roast pork), roast duck, or beef stew (gnau nam) shank meat and tendons.
My all time favorite place has been in LA Chinatown at this place on Broadway called Golden City which had changed hands many times over since the 60s. Their won ton noodles have not changed in decades like their management though. Places like the Sam Woo chain has pretty good noodles as well as the Tasty Kitchen in Gardena.
Are there any other places that you personally savor especially in the South Bay area? I know there are probably tons of places in the SGV like their dim sum houses. BTW, we have a few half-way decent places like the Sea Empress in Gardena and Szchewan in Lomita that serve dim sum at lunchtime. Nothing compared to Ocean Star and NBC though...
