Winter Mandarin Orange Salad w/ Celery Seed Dressing

Winter Mandarin Orange Salad with Celery Seed Dressing
Love this salad in the winter as it's "cheery".

I made this last night and cut everything down to 1/3. (Instead of a cup of oil I used 1/3 cup.) I used a head of Boston lettuce and one of red leafed. This fed 6 people. I had just a bit of dressing left over. I also made this in my Braun immersion mixer chopper bowl which was a breeze.

Celery Seed Dressing:
1 cup oil
1 tsp. salt
1 tsp. dry mustard
1/2 cup cider vinegar
1 small onion, grated
9 Tbsp. sugar
2 Tbsp. celery seed

Blend in a blender or mix ingredients together.

NOTE: This makes a lot of dressing so you may want to cut the recipe in half.

Salad:
Mixed greens such as 1 head of iceberg and 1 head of leaf lettuce. I usually have green leaf and red leaf or boston and leaf lettuce. Use what you like.

1 can french fried onions
1 can mandarin oranges and 1/2 cup to 1 cup toasted pecans.

Place your prepared lettuces in a bowl. Sprinkle onion rings, mandarin oranges and pecans on top.

Pour on celery seed dressing when ready to serve and toss.

NOTE: This is a large salad so again cut it in half to suit your needs.
