2 1/2 pounds oxtails, trimmed and cut in 2 1/2-inch pieces
Salt and freshly ground black pepper
1 large onion, sliced thinly
1 sheet konbu (dried kelp, available in specialty food markets and health food stores)
1 large daikon radish, about 1 1/2 pounds, peeled and cut into 1-inch-thick rounds
1 1/2 tablespoons soy sauce, or as needed
2 to 4 tablespoons thinly sliced scallions, for garnish

The oxtails are roasted, and served as a rich soup with rice. Any idea for wine pairings? I'm a little befuddled.

And what about oxtails braised in red wine, carrots, celery, etc? I have my own preferences; I would like something new to try.
