Made a trip up to NYC from Philly today and was surprised to find Dean and Deluca's stocking Wildfire Cutlery knives at their kitchen supplies section in the rear. Nice... well finished and good heft. Still not used to the design of the chef's knife though. The paring knives are definitely worth a look, the longer than usual handles look odd at first but seem very functional will probably come in handy for intricate cutting jobs.
Also was surprised to discover at the Chinatown restaurant supply stores on Bowery @ Delancey (Bowery Retaurant Supply and couple of the surrounding stores), that besides the usual cleavers etc they also carry some decent looking japanese debas, yanagi etc. (Some priced up to $800+) unfortunately didn't have my kanji brand name guide with me so couldn't make out any of the makes. Don't think there were any Masamoto's. Does anyone know what brands they carry? Wondering if they're cheaper than Korin on Warren St? Oh yeah picked up a dexter carbon steel cleaver for only $16!!!
