I've been very inactive lately, but this dish was literally worth the post. It was on the specials board so I do not know if it appears often at Koya.
The chunks of rabbit leg meat appeared to have been quickly fried; the fat was crunchy while the meat was almost like thick Parma ham. Very strong almost pork-y flavour. Mixed with a generous heap of herbs, flowers and thinly sliced dried blood orange. One of the best dishes I've had in a while.
