I know southerners, including denizens of this board, like White Lily for southern biscuits. But last weekend America's Test Kitchen on PBS did a southern show (fresh ham, greens, and southern biscuits) and tested many flours. White Lily came in behind King Arthur and (!!!) Pillsbury (both unbleached--the WL is bleached, and that what what they didn't like--said to give the biscuits a cholorine-esque flavor). Of course the show is produced by a bunch of Bostonians, which they did note several times.
