I just wanted to post a follow-up to the post I put on this section last Thursday. At that time I had posted with questions regarding the Oreo Cookie Filling/Frosting recipe contained within the Whimsical Bakehouse cookbook. I was worried that the frosting, made of only whipped cream, sugar, vanilla, and oreos, wouldn't be stabile enough. However, some wise chowhounds assured me that it would be, and I am here to say they were correct.
The only modification that I made to the printed recipe was to add Oekter "Whip-It" to the cream. I don't know whether this was crucial, but I would suggest that anyone making the frosting more than a few hours in advance consider using this.
Now, I did run into an unforseen problem with this recipe, though it was easily fixed. Though I was worried that the frosting wouldn't be stable enough, it turned out to be "too stable" in that the oreos and thickness of the cream made it impossible to pipe through a pastry bag. So, I had to sacrifice looks for taste and spoon the mix onto my cupcakes, rather than piping them. However, I still think that the end result was good, and that this recipe, as well as any others from the book, are great. Anyone concerned with appearance could simply make the oreo chunks smaller in order to make the frosting pipeable.
