I am in charge of Thanksgiving (only for 7) for the first time. I have sides covered but this will be my first turkey. I have plenty of roasted chickens under my belt but this is a different beast.
My turkey is 11.65 pounds. Should I dry brine it? Wet brine it? How long do I cook it and at what temperature in my convection oven? It is an "all natural" turkey with " up to a 6% water solution added. Thanks in advance!
