ta da--really great! I followed the Bourdain recipe mostly, but improvised with the meat.
You see, he had oxtails and short ribs in his recipe. I went food shopping and was shocked at the price of short ribs. As my Frenchman explained to me Pot Au Feu is peasant food--which means cheap cuts of meat slow cooked till tender. In trying to be economic, I ended up getting ribs that were cheap. Real cheap. I think they were the ribs that you use for barbequeing. Anyway, I did the bone marrow bones...beef roast--shoulder cut and those ribs. Could not find oxtails. Threw in all the veg and by golly, that was one killer meal last night. Real stick-to-your ribs goodness. I do have to chuckle though because what was once thought of as peasant food is now expensive. Way to go! Anyway, I just want to thank everyone who had replied to my original post in making the Pot Au Feu. Thank you--the improvising worked. Like a charm!
