Weekend's Worth of Very Good Eats in Washington, Outside Seattle

I live in Seattle, and am trying to schedule a trip to somewhere in Washington, but outside the Seattle metro area (which, let's say, covers Tacoma to Everett, sound to Issaquah), where my companion and I could count on good meals all weekend. Ideally, it would be a spot that has at least a few good restaurants, so we're not eating at the same place all weekend.

Extra points for an area that has a nice hotel or inn (as opposed to b&bs or motels). One other qualifier: restaurants should shine even to those that assiduously avoid their seafood offerings.
