I'm making a small wedding cake for a friend next month. I've made a large-scale cake before, using one of the master recipes from The Cake Bible, and doing all the calculations to get the proper amount of batter and to include the right proportion of baking powder for the different sized layers.
But my friend wants Red Velvet Cake. Is there any online tool that I can use to calculate the right recipe for my largest tier, which will probably be 12 inches?
I'm sure that I'll be posting more questions as the date draws nearer, but if anyone knows the best way for me to make sure my recipe's right, I'd greatly appreciate the help!
