I got a package of Pacific wild cod today at Costco, brought it home and cooked it on the grill in a skillet, having not added any liquid to it at all. Cooked it in a mixture of olive oil and butter with herbs. On the grill, the cod exuded so much water that it was not even sauteeing, DH used the baster to pull the liquid out, but the fish cooked so fast that it ended up being simmered. How does one avoid that, and also, was the cod treated with something that Costco should know about? They're pretty militant about the quality of their products in general.
