Water Grill Ordering Tips?

After much searching, reading and weighing, my husband and I are thinking Water Grill for our anniversary. His mom is taking us, and kindly offered that *we* choose the restaurant. Always nice!

That said, I'm looking for a little direction on ordering. Do you think the prix fixe is the way to go? I keep hearing about the foie gras, one of my favorites. Is it as good as all that? What about oysters? If I'm going to eat them, is Water Grill the place. Last but not least, what is the story about wine - can we bring our own for a corkage fee? We've got so many "special occasion" bottles at home we'd like an excuse to open some...

Has anyone been to Aqua in San Francisco? If so, how does Water Grill compare?

(and as an aside, learned about grilled cheese night at Campanile here - went last night on our "actual" anniversary. VERY yummy. The custard date tart was something out of this world)
