WAT/INJERA - November 2020 Dish of the Month

Welcome to our reporting thread for our November Dish of the Month, WAT & INJERA. This combination of dishes has long been a nominee, and now their month has arrived. WAT (also often spelled "wot") includes a broad array of Ethiopian stews that may be meat or plant based, spicy or mild. INJER is a pancake-like bread made from a fermented batter, usually of teff. For the purpose of this exploration, feel free to use alternative flours if that is what you prefer or have available. Please note that you may make wat, but no injera (no reason a wat couldn't be served with rice), or injera without wat. Along the way, you are likely to make some other Ethiopian dishes, like maybe a fitfit or firfir from leftover injera, and you should feel free to report on them as well. And if you happen to slide in some similar dishes from Eritrea or Somalia, well, I won't kick you off the thread. I'm looking forward to some amazing and interesting meals this month!

As you report on your recipe, please give us an idea of the ingredients, the technique, and most important, the final result. Did you like it? Would you make it again? Would you change anything in the future? Pictures are strongly encouraged but by no means required.
