I'm always afraid that the recipe will get buried downthread, so I thought I'd post it up top!
I had this cake at a cooking class at the local co-op and it is very good... I know a lot of people don't care for walnuts, but I really didn't find the flavor overwhelming. They served it with poached pears that had been poached in port and white wine. I've been waiting to make it until I met something who couldn't have flour so I could wow them! ;-)
1/2 cup black walnuts
1 1/2 cup English walnuts
1 cup sugar (separated into portions of 1/2 cup, 1/4 cup, and another 1/4 cup)
1/4 t. salt
2 oz. butter
4 egg yolks
4 egg whites
Toast walnuts, allow to cool, and then grind finely together with 1/4 cup of the sugar.
Cream the butter with 1/2 cup of the sugar until light and fluffy. Add yolks one at a time, scraping the bowl, and beating after each addition. Fold walnuts into the butter and egg mixture, and set aside.
In a clean and grease-free bowl, whisk egg whites, adding 1/4 cup of sugar gradually, until stiff peaks form. Gently fold the whites into the butter mixture a little at a time until evenly incorporated. Bake in a greased small loaf pan, small bundt pan, or muffin pan, and bake for 25 minutes at 350 degrees.
