Using a Vita Mix Blender to Make Lebanese Garlic Sauce

We have been purchasing Lebanese garlic sauce for several years. The person is no longer making it so we decided to try making it on our own. We were told that you need a high powered commercial blender, so we went and bought a Vita Mix VitaPrep with 3 HP. Put in the garlic cloves with some olive oil and turned it on fairly high speed (assumed that speed is the reason for needing a commercial blender), started out looking good but before long, it was effectively cooking the garlic sauce and that is not good. Does anyone know how to use one of these blenders without making the ingredients heat up? Am I doing something wrong? Any help would be appreciated. Already thinking of returning it, because this was the sole reason for my purchase.
