Virginia Ham Help

We received an 11-lb hickory smoked Virginia ham as a gift. The directions say to soak in cold water overnight--is it ok to leave it unrefridgerated for that time? It and its pot will not fit in our fridge. Any good ham uses appreciated! It's a mighty big piece of cured meat for our little family.
