Several weeks ago I asked for some ideas for a Virginia themed buffet I was planning. I found the comments very helpful and it greatly influenced my menu, which I do not claim is authentically "Virginian":

Ham and biscuits
This was preceded by a Callifornia themed passed appetizer hour inclluding: Smoked salmon pizzette (pickled red onion, horseradish cream), Sushi, Polenta with shitake (marscapone, thyme duxelle), Dungeness crab puffs with lemon mayonaise, Prosciutto wrapped figs with gorganzola and balsamico.
And followed by: Pecan tassies, Meringues, Meyer lemon shortbread bars, Sliced peaches, and Raspberries.
