vietnamese egg rolls. Help.

So I made a ton of these last night. The recipe calls for pork, shrimp, noodles, bean sprouts etc... a very typical recipe.

My question is: They do not call for the meat to be cooked before hand, I'm a bit nervous that the pork is not getting cooked and so I cook them for a long time thereby, causing them to burn.

Any ideas? Thoughts?
