Andy Ricker's Pok Pok Ike's chicken wings started it all for me. The best of all worlds, 1..Chicken wings, and 2..Vietnamese flavors. Now I have enjoyed wings at The Pig & The Lady in Honolulu, and the wings at Madame Vo's in NYC. All are awesome, though I have to give the nod to the Pig & The Lady wings as my personal favorite. They have in them all the SE Asian/Vietnamese great flavors of wings, garlic, some heat, fish sauce and sweetness. Andy Ricker's is the only recipe publicized, (that I know of...), but to me his version is a bit too salty and heavy on the fish sauce. Dont get me wrong, I love fish sauce, but there seems to me there can be a better balance as I have seen in the P&L and Madame Vo's wings.
