I have been buying venison from a producer in Fertile, Iowa. It is farm raised and is Red Deer. The venison dry aged for 2 to 3 weeks and tested for "mad cow disease" before it is slaughtered. Their website is www.venisonsteaks.com.
The meat is superb, deep and mellow. Much better than the New Zealand product that tastes, well, meaty. The meat is not cheap, but well worth it. The folks that run the farm are wonderful. Check it out!
