Vegetarian Quinoa Chili

I made this last weekend, kind of off the top of my head, and it turned out so well I thought I'd share it.

1 onion, diced
2 cloves garlic, crushed
1 can pinto beans
1 can kidney beans
1 can black olives
1 bottle beer
1 can tomato paste
1/2 cup quinoa

Saute onion and garlic in olive oil with salt, pepper, chili powder, oregano, and cumin. Add beans (rinsed and drained), then olives, beer and tomato paste (rinse the tomato can with a little beer?). Taste and season again. Add quinoa and cook until chili thickens (I had it uncovered for a while).

As I was making this, I was wishing I had chipotle or ancho chiles, and I did end up adding a little liquid smoke. I served it with a little yellow cheddar grated on top and it was pretty fantastic for a vegetarian chili. It also worked well out of the fridge the next day with some chips...!
