Last year, i threw my good vegetarian friend a feast for her birthday. She's asking for a reprise... and since I love entertaining, I am most happy to oblige.
The problem is that I am not a vegetarian, and rarely consider cooking anything pure veggie. I'm a bit stumped as to what to serve for the main course.
Besides boring-ass vegetable lasagna, eggplant parmesean, or assorted other baked-pasta dishes, what else works? Last year I made risotto - I'd prefer not to repeat that. For another party, I made this enormous 6-layer vegetable torte that was delectable -- but took almost two days to make.
Suggestions!??!?! Epicurious.com tries my patience. And I don't want to shell out $30 for the Deborah Madison cookbook.
