Vegetarian CHICKEN, BEEF, PORK, SHRIMP in Kosher veg. restaurants

Does anyone know what Kosher vegetarian restaurants use to make mock chicken, beef, pork, and shrimp?
I have tried making these foods on my own, using many combinations of tofu, tvp, seitan, and have had little to no success matching their products.
Veggie Heaven in Teaneck has wonderful mock chicken, its texture is very realistic, and with enough sauce can pass for the real deal. Their mock shrimp is great too, considering they don't use any fish products.
Buddha Bodai in Queens has a very tasty Pork analog, and while I wouldn't know if it resembles the real thing, it sure is tasty.
Does anyone have any clue what is used, if is it store bought, or both?
