Vegetable Paejeon To-Go @ Han Kook Market in Seaside

A couple weeks ago I dropped in to Han Kook Market, a small mom-and-pop Korean grocery store in Seaside on the Monterey Peninsula. This was a first time for me, as I've tended to patronize the ones a wee bit closer to me in the town of Marina, and also I'd been put off before by the faded façade. However, I was inspired to give it a try because I've had the vegan kimbap (sushi rolls) served at events catered by one of my favorite chefs, Michael Jones of Cachagua General Store in Carmel Valley. The selection of prepared food available on Fridays was nearly gone at 2pm. Only the Korean fried chicken wings and vegetable pancakes remained. I grabbed a package of the pancakes, aka paejeon, $3.50 for five pieces.

The next morning I reheated a couple for breakfast. I almost reached for a skillet to warm them up on the stove top, but changed my mind. I preheated a pie tin in the toaster oven at 350 degrees, then put two on the hot surface and baked for 3 minutes. The pancakes were quite oily on the surface, and this fried the edges to a satisfying crispness while the interior stayed soft and moist. The rest was easily blotted with a paper towel. Packed with scallions, shredded carrots and other savories, these were a tasty start to the day. Two was just right for breakfast, and another day, three with some kimchee made for a nice lunch. I'd get these again.
