Vegetable dish for brunch?

operagirl | Dec 22, 201407:41 PM     18

I'm trying to figure out what to bring to my family's Christmas morning brunch. My uncle is making a beautiful spread, including latkes, scrambled eggs, breakfast meats, a fruit salad, and pancakes.

I'd like to bring a vegetable-based dish that's brunch-appropriate and doesn't compete with all of the other wonderful things he's making.

I'm thinking a frittata or quiche would be redundant given the scrambled eggs, and I don't want to do a gratin or bready casserole since there's already a lot of starch going on. Any ideas would be greatly appreciated!

Oh, and it should be noted that while a contribution is welcome, there is also the option of just bringing myself, if it sounds like an extra dish would just be unnecessary.
