In American food culture, vegetables are often an afterthought, relegated to "Ya get two sides with that, Hon!" But every so often, one comes across a dish that reminds us of the wonderful things that are possible when a good chef takes on the bouty of the plant world.
Today's convesation starter - what's your favorite vegetable dish in the area? It doesn't have to be a main course (though it could be) - it could be a salad, a soup, a vegetable side dish, or even a dessert. And it doesn't have to be from a vegetarian or vegan restaurant. I'm not looking for strict vegetarian orthodoxy, just looking for the best dishes featuring items other than meat/fish/poultry as the centerpiece of the dish.
