Need something "new" for Vegas

We'll be heading out to Vegas in August for a week, and I'm hoping to get some CH advice. We've been going every year for the last 2 years or so, but pretty much only for a long weekend at the most. I'm looking for anything new (to us), maybe some days of casual food with a few more high-end places in between. No buffets if possible, please. To give you an idea of what I'm looking for, here are the places we have been to before:

- B & B Ristorante for the tasting menu
- Bouchon for breakfast
- Tao for late dinners
- Grand Lux Cafe (not my favorite, but a good stand-by for late night food)
- Pink Taco for happy hour
- Mesa Grill for brunch and dinner
- In-n-Out

We'll be staying at the Palazzo (Venetian) and will have a car, so anything in the other resorts/nearby area would be fine. I've seen many posts about Lotus of Siam and Burger Bar so I'll be putting those on my list. I know there are a great deal of steakhouses in Vegas, but anything that I can only get there/not in other major cities? Any suggestions would be greatly appreciated!
