So, here's the deal: I'm making a small wedding cake for two friends. The catch: no eggs, no wheat, no corn, and not chocolate.
Luckily, I can use white spelt flour (which works very much like wheat flour) but definitely no eggs and no cornstarch or corn syrup.
I'm thinking of a lemon, almond, or spice cake--I want a cake that is as much like a "real" layer cake as possible. Anyone have some good tried-and-true eggless (i.e., more or less vegan, although I can use butter) layer cake recipes that really work? Or cookbook suggestions? Thanks!
