veg-friendly Vietnamese

Growing up in Minneapolis, I loved Vietnamese food and had lots of veg options. Having just moved to Montreal, I was excited about that angle as well, but most of the Vietnamese places I've checked out have only 1 veg main dish option, which is veggies in a boring sauce over crisp noodles. Sometimes you can also get fried rice.

Is there a Vietnamese place in town that will do tofu or something else like it as an option for their wide array of sauces and meat dishes? Veggie spring rolls or egg rolls?

While we're at it, I'd be interested to know of the best veg-friendly chinese and thai places in town too. I already have gone to and am an aspiring regular at Chuchai, but if there are cheaper options, I'd love to know!
