Veal Sweetbreads

Hello, everyone,

I have received some veal sweetbreads from a recent order from D'Artagnan's. I have not made them before but have been very interested in trying them so took the opportunity.

I started looking at some video recipes online, initially coming across this Chef's favorite way to prepare them, which isn't very descriptive. https://www.youtube.com/watch?v=Hs-fy...

Today, I came across this video on one of my first hits. https://www.youtube.com/watch?v=3vHgF... that involves a 2 or 3 day process of brining (changing out the water three times), then blanching them, then a cold water shock, and then pressing in frig, all to "remove the impurities" and have the meat firm for cooking. So now I'm wondering what did I get myself into?

I've come across some other video or recipes that don't describe such a process, though.

But I want to make sure I don't skip any important steps in preparation, like one would do for chitterlings or something.

So, I wondered if any of you have a favorite way of preparing and cooking sweetbreads, I'd be interested in any input or advice for this dish, or a favorite recipe.
