A friend invited me to this new restaurant on Kean U campus. Its called Ursino and its very cool. Peter Turso is the Chef there, I first met him when he was the sous chef at Restaurant david Drake. The space is very modern but the food is farm-to-table and really innovative. I had the Salmon over eggplant with tomato-fennel broth, and started with the Pork Belly with Apple Gastrique. Both were yummy! Anyway, I believe that this may turn out to be one of the best restaurants in North/Central Jersey. I definately recommend. I think they open to the public this week.
