I had occasion to be at Brackenridge Hospital in Austin on Friday and I needed something to eat. Against my better judgement, I went to the cafeteria where the breakfast special was carne guisada. It was excellent! A cheap cut of meat simmered in a cumin and chile spiked gravy until the meat was a soft, mouth-filling gelatinous treat. The gravy had terrific balance, with just the right amount of cumin and a mixture of fresh and dried chiles. Truly, a delicious treat in a Chowhound's wasteland.
