Unofficial Start of Carnivale Season in the Veneto

Well, here I sit in my fav pasticceria, (Pasticceria al Duomo, Padova), and every morning the ever cheery and smiling baristi are constantly restocking the display case with still warm Fritelle made in the attached bakery. Fritelle are little round balls of fried dough filled with various crema, chocolate, marmalada, etc., 2 sizes are available golf ball and tennis ball size. Fritelle are ubiquitous in the Veneto. Som really great Fritelle and some real "belly grenades", they are best eaten warm from frying, with your morning cappuccino.
Then after the culmination of Carnavale on the Tuesday before Lent begins, there is not a Fritelle to be found for another year.
