Last month my friends surprised me by procuring a original from Uncle Tetsu Japanese Cheesecake for dessert. While I've had Japanese-style cheesecake from restaurants in the SF Bay Area, this was my first taste from this international chain.

Much more airy, almost souffle-like, and rather neutral in flavor, there is a tell-tale dairy taste that clues you in that it is a cheesecake. But this made it a good finish after a heavy dinner. Besides the texture, maybe the most notable characteristic is the reduced sweetness, so much so that it almost does seem like dessert.
