Tweaking Marbella

Just thought I would share my Chicken Marbella revisions from the other night.

- Instead of 4 chickens, I used a similar amount of all thighs (with skin and bone). They stand up nicely to the cooking/reheating and were beautifully tender.
- Misread the recipe when preparing to marinate and put absolutely everything into the pan at once the night before. There was no difference from the times I've added sugar and other ingredients just before baking.
- I used dried apricots instead of prunes. I cut the apricots in half. They don't disintegrate into the sauce, but soften and add sweetness and tartness. Much prefer apricots! Will do the same again.

That's all. Everyone loved it but there was too much food and so we had leftovers - which is fine because I was able to send care packages home with my kids!
