Tuscany and Florence Foodie Trip

We are planning to go to Tuscany next month and are looking for for really, really great Tuscan restaurants and trattoria - not necessarily 5 star formal white glove service (and not any typical touristy places). I work for a fashion magazine and cover restaurants in New York so I’m a bit spoiled wanting the best.
We will be :
2 days Pisa and Lucca area
2 days Castelina in Chianti
2 days Monteroni D’Arbia
2 days Montepulciano
4 days Firenze

I'd welcome suggestions of your favorites in these areas.
