The combo of Mango/Ginger Chutney (on one bread surface) and Smoked Gouda (on the other) is that rarest of rarities: guaranteed effortless deliciousness. Especially with turkey. Virtually a turnkey operation. The eggs and spinach weren’t necessary; mostly for nutrition (though they tasted good).
I used just half a slice of that gouda. 45 calories worth. A few years ago I spent a year cooking only panini, and used no cheese at all. So I developed tricks for instilling cheeseless moisture, flavor, and luxury. So now that I'm adding cheese, it's like an explosion of flavor even when I use it minimally.
