Does Turkey *really* increase in temp. after removal from the oven?

Ok, I know *all* the recipes say that it does, but I have trouble believing it. Does any one have a scientific explanation for how this could happen? I can certainly believe that something will continue to cook after you take it out of the oven (it's hot, after all), so that for example, red meat will turn more pink, but I really don't see how the temperature can rise.
