I'm going to make turkey broth tonight but I won't be able to start it until about 9:00 p.m. I usually simmer my stock for 3-4 hours before straining and refrigerating. Since I have to get up early and can't stay up until 1:00 a.m., can I simmer the stock in the oven overnight? I was thinking that I could bring it to a boil first, and then put it in the oven at about 250. Then, strain and refrigerate in the morning. Are there safety issues if I do this?
