Tung Lai Shun vs. China Islamic

Hi 'hounds

I'm a newbie to Chinese Islamic food. I've read with great interest some recent reviews about Tung Lai Shun, and I've read JG's description of China Islamic in Counter Intelligence. I've got a friend from Phoenix coming in this weekend and am planning on hitting one of these places for the first time. So my questions are as follows:

1) Which restaurant do you feel best represents the cuisine?

2) I really enjoyed the Tung Lae Shun writeup below, with recs for beef tendon (can you describe this?) the sesame bread and lamb soup. Any other recs for 3 people to try?

3) What items does China Islamic prepare the best/most authentically?

4) Any other Monterey Park/Alhambra/Rosemead joints you feel are worthy would be most welcome. Haven't had shabu shabu yet-- your suggestions as to where to try it?
