Tsuke-men at Ramen Halu, San Jose

This summer's cold ramen special at the mightly Halu was tsuke-men. Made with the thick, firm Halu noodles served cold on the side, the intensely salty piping hot dipping stock had all the maritime-y, seaweedy, brininess absent from Ryowa's version. Actually, too salty for me, I think I downed three glasses of the delicious cold jasmine tea to try to stay in equilibrium. Just a bit of this dusky broth on the cold spinach, roast pork, or black tree ears was overwhelming. Tasty and complex with sweet garlic, bonito, mackerel and dried fish essence laced with porcine richness, just wish I could have enjoyed it more. A bit of a let down after going ga-ga over the other seasonal specials here so much, perhaps this was too Japanese for me.
