Frustrated that Tsujita LA has delayed their ramen service for so long since its opening? Thanks to Grub Street LA, I found out about Tsujita LA using another venue to "preview" their ramen.
The folks at Tsujita are using Tanaka Ramen, in the Mitsuwa Food Court on Centinela as a "test kitchen" of sorts. This is a pop-up run, and it expires on Oct. 22. (yes, it ends today).
I caught a bowl of Tsujita’s... er... Tanaka's tonkotsu ramen today for lunch. While I know that the claim-to-fame for Tsujita is their tsukemen, alas, they were only serving the tonkotsu ramen today.
Verdict: The broth is rich, but just not as complex as their next-door neighbor Santouka. The noodles were thin but firm, with "bite". The chashu is quite good, albeit a bit over-salted.
Keep at it, test kitchen... We look forward to finally getting ramen & tsukemen at Tsujita one day...
